YAPS Noodles 叶府家乡面

Henry, owner and chef of YAPS Noodles, hawker stall at Yishun Park Hawker Centre is serving curry noodles which originates from Ipoh, Malaysia. Henry's cooking to reflect his hometown taste, which is evident with every sip you take from the rich broth.

Henry says "people in Ipoh ah, really know how to eat. If a stall’s food standard drops, people will immediately go somewhere else, very picky about food.”

Henry started learning cooking and became a chef when he realised that it's the best way to maintain food prices and maintain quality. He became a chef and worked at several places in Singapore such as Café Cartel, Oasia Hotel and Tanjong Beach Club, before starting YAPS Noodle at Yishun Park Hawker Centre.

His stall is situated by the side of the main road; across the road from Yishun park. Henry cooks a few well known dishes from Ipoh, Ipoh's curry noodles, which he inherits from his mum.

“I miss home, and cooking these dishes is my way of connecting with home,” says Henry.

(Unlike other types of curry, the Ipoh version uses less curry powder and is more aromatic with ingredients like lemongrass, chillies, dried shrimp, garlic and shallots.)

Henry mixes a rempah (spice paste), which is fried over low heat for two hours, way before he starts serving food! He also prepares a lot of good quality ingredients, the curry noodles – dry or soupy – are topped with sides like prawns & clams, sio bak (roast pork), char siu, taupok, fried pig’s skin and cockles.

Notable points

1. soup base is super flavourful, rich & strong prawn broth. SUPER SPICY. We were sweating like crazy, very suitable for spicy food lovers!

2. Fresh Ingredients - Fresh prawns, clams are fresh & pork belly shao rou is nice and bouncy too.

3. A lot of ingredients - there is almost the same amount of noodles as they is ingredients!
